She explains that antinutrients such as oxalates and phytates block minerals, meaning the body may use only half the nutrients unless paired with fats. Batra suggests adding ingredients like ghee, sesame seeds, white butter or curd to enhance absorption of minerals and vitamins, aligning traditional food practices with modern science.
